Over-salted food isn't ruined! Add a squeeze of lemon juice or a splash of vinegar - acid balances salt. A pinch of sugar can also help. For soups and sauces, add more liquid and unsalted ingredients to dilute. Potatoes can absorb excess salt in soups - add a peeled, raw potato and remove it after 10 minutes. For vegetables, blanch them in unsalted water. Remember: it's easier to add salt than to remove it, so season gradually.
